Layered Enchilada Bake

{1} lb. ground turkey [or beef]
{1} large onion, chopped
{1} garlic clove, minced
{1 tsp EACH} chili powder, cumin, cilantro
{1/2 tsp} ground black pepper
{1} can black beans, drained & rinsed
{6 oz.} plain Greek yogurt [or sour cream]
{1 cup} chunky salsa
{1 can} diced tomatoes
{4} whole wheat flour tortillas
{2-3 cups} shredded cheddar/jack cheese

  1. Preheat oven to 400° Fahrenheit.
  2. Brown meat in skillet; drain grease if necessary.
  3. Add onions, garlic, and seasonings to cooked meat  and heat until onions begin to soften. Add beans and mix well.
  4. In separate bowl, combine yogurt, salsa, and diced tomatoes. Mix well.
  5. Grease 8×8 baking dish. Layer one tortilla, meat mixture, salsa mixture, and shredded cheese. Repeat two more times, ending with plain tortilla on top.
  6. Cover dish with foil, and bake for 30 minutes.
  7. Remove foil, sprinkle extra cheese on top, and bake for 10 more minutes.
  8. Let stand for 5-10 minutes before serving.

Makes 6 servings.
