Tomato-Cucumber Salad

Here’s an easy summer salad that you can throw together in minutes… add a slice of crusty whole grain bread and it becomes a cool and refreshing summertime lunch.

{1} chopped tomato, with juices [about 2 plum tomatoes]
{1/2 cup} chopped cucumber [about 10 slices]
{2 Tbsp} diced green onion [about 1 stalk]
{1/4 cup} shredded mozzarella
{dash of EACH} salt, black pepper, basil

In a serving bowl, toss together vegetables and shredded cheese. Add salt, pepper, and basil to taste. Let stand for about 30 minutes before serving.

Makes 2 servings.
