Creamy Coleslaw

I’m not really a coleslaw person. Most of the time I just take a few bites to be polite… but this one? I could eat a whole bowl of it in one sitting! This is “not your grandma’s” coleslaw. Actually, it’s my mom-in-law’s recipe, and it whips up quickly and tastes amazing! 

{1 1/4 cup} light mayonnaise
{3/4 cup} sweet relish
{2 Tbsp} cider vinegar
{1 Tbsp} celery seed
{1 tsp} onion powder
{dash} ground black pepper
{1 lb} shredded cabbage & carrots

  1. Combine everything but the cabbage in a 2-cup measuring cup. Mix well.
  2. Pour cabbage into a large bowl, add in mayonnaise mixture, and stir until well blended.
  3. Chill for a few hours before serving.

Makes 6 half-cup servings.
