Eggplant Tomato Bake

I love experimenting with fresh, seasonal vegetables… how about you? Eggplant was on sale last week, and hubby asked me to get one. And me being me, I have a hard time cooking vegetables the same way twice. So I went scrambling for a new idea, and found the inspiration for this recipe. And let me tell you- it came out sooooo sooo good! If you don’t think you like eggplant, try this. If vegetables could melt in your mouth, these would do it!

As a side note, I left the eggplant peel on for this. It added some shape and stability, so the eggplant didn’t just turn to mush. But also, do you realize just how many nutrients are in the skin? It’s purple, and most of us don’t get a lot blue/purple produce in our meals. Purple produce is a powerhouse of antioxidants, magnesium, potassium, B vitamins and folate- just to name a few. So why not try some this week?

 

Eggplant Tomato Bake

{1 medium} eggplant
{2 Tbsp} olive oil
{2 medium} white onions, chopped
{2 cloves} garlic, minced
{1 tsp} nutmeg
{2 cups} tomatoes, diced
{2 tsp} basil
———–
{1} egg, lightly beaten
{1 cup} toasted bread crumbs
{1 cups} shredded mozzarella
{1/2 cup} shredded parmesan
fresh basil for garnish

{4 servings} cooked rotini
{16 oz} tomato sauce

Instructions:

  1. Preheat oven to 350 degrees.
  2. Wash eggplant and slice into 1/2″ rounds. Dip into saltwater bath, then place in colander and let drain for 30 minutes. Meanwhile, begin to saute onions, garlic, and nutmeg in olive oil at Low heat.
  3. After 30 minutes (once onions begin to soften), coarsely chop eggplant and stir into onions. Cook 5-10 minutes, stirring frequently, until eggplant begins to brown.
  4. Turn off heat, mix in tomatoes and basil. Transfer to baking dish.
  5. In separate bowl, mix together egg, bread crumbs, and cheeses. Layer on top of the eggplant mixture.
  6. Bake, covered in foil, for 15 minutes.
  7. Add fresh basil and bake uncovered for 10 more minutes (until cheese starts to turn golden brown).
  8. As eggplant bake finishes, stir tomato sauce into cooked pasta. Serve together.
