How to Cook Spaghetti Squash

The following was originally posted on October 26, 2011. If you've never enjoyed spaghetti squash, now is the perfect time of year to try it. As the name implies, the cooked flesh looks like spaghetti (or angel hair pasta), and is often used as a substitute for pasta. It has a mild flavor and a pleasant crunchiness that is very satisfying. And it is loaded with potassium, vitamin C, a few B vitamins, and a whole lot of other nutrients that make it oh-so-good for you. As my husband said tonight, it's hard to believe this food is actually a vegetable!     Spaghetti squash can be prepared many different ways. It can be microwaved, boiled, roasted, sauteed, even put in a [...Read More]

Eggplant Tomato Bake

I love experimenting with fresh, seasonal vegetables... how about you? Eggplant was on sale last week, and hubby asked me to get one. And me being me, I have a hard time cooking vegetables the same way twice. So I went scrambling for a new idea, and found the inspiration for this recipe. And let me tell you- it came out sooooo sooo good! If you don't think you like eggplant, try this. If vegetables could melt in your mouth, these would do it! As a side note, I left the eggplant peel on for this. It added some shape and stability, so the eggplant didn't just turn to mush. But also, do you realize just how many nutrients are in the skin? It's purple, and most of us don't get a lot [...Read More]

Creamy Coleslaw

I'm not really a coleslaw person. Most of the time I just take a few bites to be polite... but this one? I could eat a whole bowl of it in one sitting! This is "not your grandma's" coleslaw. Actually, it's my mom-in-law's recipe, and it whips up quickly and tastes amazing!  {1 1/4 cup} light mayonnaise {3/4 cup} sweet relish {2 Tbsp} cider vinegar {1 Tbsp} celery seed {1 tsp} onion powder {dash} ground black pepper {1 lb} shredded cabbage & carrots Combine everything but the cabbage in a 2-cup measuring cup. Mix well. Pour cabbage into a large bowl, add in mayonnaise mixture, and stir until well blended. Chill for a few hours before serving. Makes 6 half-cup servings. Nutrition [...Read More]

Zucchini Alfredo with Bacon

I used to always make my own alfredo sauce from scratch, but it's just so much work! And really, there's some pretty amazing varieties on the grocery store shelves. My favorite brands are Classico and Bertolli, especially the ones that contain Roasted Garlic or Aged Parmesan Cheese. Shop with coupons or sales and you can get a few jars of those at a really decent price! So anyway, here's a recipe that combines convenience and freshness, cutting down on the amount of work but keeping all of the flavor. [...Read More]
